Mushrooms a la Greque

This dish was made to accompany the Rack of Lamb in a Herb Crust recipe also on this blog. All the dishes was prepared as part of the French Summer Wedding Menu shoot we have done earlier in September. See the full post and article here.

 Mushrooms a la Greque Serves: 6 small serving dishes   Ingredients 2 Tomatoes 80ml Olive oil 70ml Wine 2 Shallots finely chopped 1 Garlic clove chopped 6 Coriander seeds-crushed 500g Mushrooms 1 bay leaf 1 thyme sprig 10ml lemon juice 1/2 tsp sugar 1 tsp chopped parsley   Instructions:  1. Chop only the flesh of each tomato. 2. Put the wine, tomato, shallots, garlic, coriander, bay leave, thyme and 250ml water in a pot and bring to boil. Cover and simmer for 10 minutes. 3. Uncover the pan and add the mushrooms. Simmer for further 10minutes. 4. Remove the mushrooms from the pot. Remove the bay leave and thyme. 5. Boil the sauce and add lemon juice, seasoning and sugar. 6. Reduce the sauce until only 250ml is left. 7. Serve cold. Sprinkle the parsley over the mushrooms after the sauce is added to each portion.
