Rooibos Tea Baked Cheesecake

I recently held my annual High Tea party in Cape Town to celebrate my birthday but also to treat our friends and some clients with special cakes and treats. Today I want to share with you an original baked cheesecake made with Carmien Tea Company’s delicious and strong fragrant Rooibos flower tea. We received a few brewing pots and teas from Carmien Tea to serve to our guests and thought it best to add this cheesecake recipe I created to the product review I wrote about them. Rooibos tea Cheesecake2   Rooibos Tea  Rooibos Tea Cheesecake – by Nicolette van Niekerk  Preparation time: 20 minutes Baking time: 2.5 hours Serves: 12 (1 x 23cm round )   Ingredients: Base: 300g Digestive Biscuits 100g Melted Butter   Cheesecake: 500g Creamcheese 500g Mascarpone Cheese 125ml Fresh Cream 200g Castor Sugar 30ml Honey 10ml Vanilla Essence 2 tsp Rooibos {flower tea leaves – I used Vintage Romance} 15ml (1 Tbsp) Cornflour 4 Whole eggs 4 Egg yolks   Topping: 100g Flaked Almonds 50ml Honey * The flower tea can also be replaced by instant Rooibos tea.   Method:
  1. Preheat the oven to 170°C.
  2. Prepare a 23cm (9in) springform tin by cutting a circle out of wax paper. Make a collar for the sides, as the cheesecake batter will be higher than the tin.
  3. Melt the butter and crush the biscuits. Add them to a food processor and ensure that butter is well mixed with the biscuits.
  4. Press the biscuits into the cake tin and set aside in a cool area.
  5. Combine all the ingredients into a mixing bowl and blend well with an electrical beater until smooth.
6.Add all the mixture at once to the cake tin, spread out evenly and bake in a preheated oven for 1 hour. 7. After one hour, reduce the oven temperature to 150°C and bake for another hour until almost firm. 8. Turn off the oven, open the door slightly, and allow cooling for 30 minutes or until set. Refrigerate until served. 9. Turn the oven back on to 230°C and roast the almond flakes on a flat sheetpan for a few minutes until golden brown. 10. To serve, drizzle the honey over the cake and scatter the almonds to cover the cake. Have a cup of tea to celebrate your success of baking this delicious Rooibos tea Cake.
