Rose Apple Tartlets

Visually beautiful, tasty and also easy to make. What is not to love? I found a few recipes online that showed this technique so couldn’t resist trying it myself. I loved all of them but changed mine to have a good dose of cinnamon, almonds and brown sugar. Josua, my three year old, even helped to roll them, this just come to show how simple the process is. The recipe calls for puff pastry. You may use a store bought one or make your own. There is also shortcrust pastry available in store that works just as well. Rose Apple Tartlets Cover Apple Tartlets closeup   Preparation Time: 30 minutes Baking Time: 35 minutes Serves: 6   Ingredients: 3 Large Red apples, cored, halved and sliced thinly 100g butter 50g brown sugar 50g icing sugar 50g almond flakes 15ml Ground Cinnamon 30ml fresh cream 1 x 400g ready to roll puff pastry Josua explaining Method:
  1. Preheat the oven to 180℃. Grease a muffin pan.
  2. Prepare the apples and place them in a microwave bowl, covered in plastic wrapping. Cook for 3-4 minutes.
  3. Remove from the microwave, place them on paper towel to dry and cool down.
  4. In a food processor, combine the butter, brown sugar, icing sugar, almond flakes, cinnamon and cream. Mix to a smooth paste.
  5. Prepare the puff pastry. Unroll it and with a rolling pin, roll the dough into a thinner sheet. Divide the sheet into 6 strips.
  6. To each strip, smear the almond paste quite thick.
  7. Place the apple pieces onto the strips, skin side facing up and layer them on top of each other.
  8. Carefully fold the bottom half of each strip, closing the apple pieces. Only the top half of the apples should show.
  9. Roll each piece, quite tightly into a rose tart roll.
  10. Place them into a greased muffin pan and bake for 30 -35 minutes.
  11. Remove from the oven. Allow to cool slightly.
  12. Dust with icing sugar and serve with fresh cream.
